My sons are just similar to all the other kids: they like pasta. Pasta with soured cream, cheese, or broccoli. But when I want to serve for them something different usually I make an omlette with spaghetti.
Precaution: spaghetti omlette is bikini-killer, So if You are on diet, please jump over!
Ingredients:
(serves 6)
for the sauce:
100 gr butter
50 gr flour
0,5 litre milk
salt
freshly ground nutmeg
100 gr mature cheddar
500 gr dry spaghetti
1 bunch spring onion
olive oil
100 gr bacon
fresh flat leaf parsley
cc 300 gr broccoli
Preheat oven to 180 degrees.
In a saucepan, melt the butter on low heat. As soon as it melts, add the flour and stir with a wooden spoon until there are no lumps, and increase the heat to medium-low. Add the milk slowly, stirring constantly with a whisk, and continue stirring until the sauce begins to thicken. Remove from the heat and stir in salt, and nutmeg. After then add roughly ground cheddar and mix well.
Bring salty water to boil in a large pot. Cook the pasta “al dente” then drain and stir to cheese sauce. Set aside to cool.
Wash the broccoli and trim them. Put the florets in a steamer and give a pinch of salt. Steam for 5-6 minutes.
In a clean saucepan heat olive oil, and then add chopped onion. Fry for a minute then add chopped bacon. When it’s fried add the steamed broccoli and mix them well. Pour the mixture over the pasta, mix them well, and put in a frying pan, which is small enough to be put in the oven.
Grill the pasta in the oven for 15-20 minutes, or until the top is golden and crispy.
Take out with gloves and leave to cool for a few minutes. Serve warm cutting to slices.
