GREEN GAZPACHO

The first sign of real summer is that I’m not willing to turn the cooker on. And the other day it happened as a Hot alert has been placed when the predicted temperature was above 30 degrees. Can You believe it? It’s not a typical english weather  even if I’m happy with that. It’s perfect time to serve cold beverages, make home made ice creams, or get ready for a nice picnic.
This Green Gazpacho recipe is a brilliant choice on any hot summer days.

green gazpacho (1 of 5)


Ingredients: 

3 ripe avocados
2 unwaxed lemons
1 cucumber
2 garlic cloves
appr 400-450ml purified water
a bunch of parsley
1-2 tbsp balsamic vinegar

Salt, pepper to taste

8-10 king prawns ( cooked)

    Yes, we peaked at 33°C at Horncastle..
    We'll be back to -18°C soon enough.
