A few days ago I posted on my Multiculti Kitchen Facebook page a photo of this very simple salad, and I asked my lovely followers if they need the recipe. Nobody has said yes, I post it here even though…..
Not just to be sure to have been documented in my digital cookbook but I hope that somebody else beside me and my husband likes this combo….. Hands up please, if You would like to taste it!
The recipe is absolutely easy, but right now when I’m trying to loose weight I prefer these kind of light and fast, tasty salads. After having this for dinner the running will be an easier process…. Hopefully!
1 fennel bulb
half of pomegranate
for the dressing:
3 tbsp olive oil
1 tbsp lemon juice
half teaspoon runny honey
pepper to taste
- Wash the fennel bulb then slice finely.
- Peel the grapefruit and cut along the inside of the membrane into the center of the fruit. (A paring knife is recommended for this part of the process.)
- Mix the fennel slices with segmented grapefruits, then garnish with pomegranate seeds.
- Mix all the ingredients of dressing in a jar. Taste before serving then pour over the vegs and fruits.
