Last time when we went to the seaside in Skegness we ate a lovely, crispy waffle.
It was not simply delicious, but it was so perfect like in my childhood at Lake Balaton during the summer. I decided immediately I had to buy a waffle maker to be able to bake at home a similar good one to my boys, too.
So I ordered a waffle maker on the net and a few days later I got it. I received a recipe book with the maker so I tried the enclosed recipe. Oh my God, it was horrible…. It wasn’t crispy, it had no texture. It was just nothing…. So I began to search the best recipe obsessively and I made waffle every day… Every single day.. Can You imagine my boys’s face on the 7th day? One week later I presented the ever best waffle but by that time my family went mad if they saw waffle again on the table…. Since then waffle maker is somewhere on a deeply hidden shelf, and I just wait for the time when my boys come to me to beg some waffle…. Yes, I ‘m a bit hurt.
Anyway, believe me this waffle is amazing: crispy outside and soft inside. I tried the recipes with yeast, and a lot of butter, and so, but I found that corn starch is the key point to be so crispy as desired.
Ingredients:
3 eggs lightly beaten
170 ml whole milk
130 gr plain flour
100 gr corn starch
3 0 gr sugar
100 gr butter
pinch of salt
2 teaspoon ground cinnamon
for the fruit sauce:
250 gr frozen forest fruits
2 tbsp sugar
Melt the butter in microwave oven. Place flour, starch, sugar, salt, cinnamon in a bowl. Add the eggs, and mix with a whisk. Gradually add the milk and stir well. The batter will be a bit thicker than a usual pancake batter, and will be stickier as well.
Preheat waffle maker on a high grade. When it’s hot enough put one or two tablespoon batter in the maker. Bake until golden brown.
Place to a wire rack and then leave to cool. Don’t place them on the top of each, otherwise they will collapse.
Meanwhile put the fruits and sugar into a pan. Heat on medium, and boil for 1- 2 minutes. Set aside and leave to cool.
Serve with waffle and decorate with some whipped cream as well.
