It seems in UK people eat fish and chips every day, so the only one thing that they never ever eat at Christmas is fish.
But in Hungary, as we usually don’t eat fish at Christmas it’s a must!
I like smoked salmon, especially scottish smoked salmon. I think it’s very healthy, and as we don’t eat every day it’s a bit festive for me.
In this recipe I covered ramekins with salmon and filled them with goat cheese and avocado. And then I gave them rest in fridge for a night.
Delicious!
Ingredients for 2 moulds:
2 souffle or ramekin moulds
cc 200 gr smoked salmon in thin, long slices
100 gr soft goat cheese
1 tbsp chopped fresh chives
2 ripe avocados
squeeze lemon juice
freshly ground pepper
Cover ramekins with cling film. Put the salmon in ramekins to cover well the bottom and allow plenty of overhang down the sides . Put the cheese, chopped avocados into a bowl. Mix well with a fork, add chives, juice and pepper to taste. Fill the cream into moulds, cover the top with salmon then cling film, and chill in the fridge for a night.
Serve with fresh green salad, lemon wedges, and dill. Serve some toast as well.
