Clafoutis is one of the easiest and fastest dessert in the world. Usually it’s made with fruits, but winter is definitely not the season of fresh, and fragrant fruits… At least here in UK. So  I made it with coconut milk, lime, and sprinkled with passion fruit pulp. Just to have a far-East feeling….
It’s totally different than the classic french clafoutis but also delicious. Please try it!

Ingredients for a 18-20 cm diameter mould:
1 tin coconut milk
2 finely grated lime zest
2 eggs
2 tbsp corn flour
30-50 gr granulated sugar

some butter and flour to prepare the mould

icing sugar and passion fruit pulp to garnish

Preheat oven to 140 C. Prepare the mould with butter and flour. 
Mix the flour, sugar and eggs smoothly with a wire whisk, then add the milk gradually. Mix well, then season with lime zest. 
Bake in the oven for 45-55 minutes. It’s ready when the top of that is golden and crispy and the middle  has been set. 
Serve warm with icing sugar and passion fruit.
