CHOCOLATE AND GRAND MARNIER FUDGE

November 26, 2013 0 Comments

I have thought for a long time that fudge is a very british treat. But the origin of that goes back to the 1800’s America. Until I tasted the supermarket bought ones only, I didn’t like it at all. And then I visited some really nice Food and Drink Faire where I saw that there are really lovely versions of home made fudge. The number of flavors You can add to your own  is endless. Combine them to your taste and as Christmas is at the corner wrap them up into a nice colored piece of paper and your individual hand made gift is ready.

Ingredients (for a 12 X 18 cm rectangle dish):

1 can condensed milk
100 gr unsalted butter
100 ml milk
80-100 gr dark chocolate chips
5 tbsp Grand Marnier or to taste
1 tbsp candied orange zest (optional)

  1. Put the condensed milk, butter, and milk into a small pan. Heat on low stirring frequently and bring to boil then simmer for 10-15 minutes.
  2. Stir continuosly with a wire whisk and take care as it’s really hot and bubbling. If You have a sugar thermometer it should be about 118 C. If You don’t, just take a little jar with ice cold water and  drop a little piece of mixture and it should keep the form.
  3. Remove from the hob, add the chocolate chips and Grand Marnier. Stir with the wire whisk until gets very thick.
  4. Take a tin, line with greaseproof paper. Pour the mixture in and smooth the top nicely with the back of a spoon.  Leave to cool until set  then cut into tiny squares.
