
Today is Shrove Tuesday or Pancake Day. We really like pancakes specially my Mum’s extra thin, crispy edges pancakes. But this time my boys wanted to eat thick american type with maple syrup. Loads of maple syrup! And as a Mum who mind their health I opted for a healthier batter with banana and chia seeds. And worked pretty well even without maple syrup or kumquat marmalade:-)
Ingredients for 12-15 pieces:3 tbsp chia seeds
1 egg
2 tbsp melted butter
250 ml whole milk
150 gr natural yoghurt
2 very ripe bananas
200 gr wholemeal spelt flour
1 level tbsp erythritol
pinch of cinnamon
pinch of salt
1 teaspoon baking powder
oil for frying
for the marmalade:
appr. 200 gr kumquat (or persimmon)
2-3 tbsp sugar
1 egg
2 tbsp melted butter
250 ml whole milk
150 gr natural yoghurt

1 level tbsp erythritol
pinch of cinnamon
pinch of salt

for the marmalade:
appr. 200 gr kumquat (or persimmon)
2-3 tbsp sugar
- Pour the milk into a bowl. Add the egg, yoghurt and butter. Whisk with a fork then add chia seeds. Set aside and leave to absorb the liquid for about 10-15 minutes.
- Sift the flour into an other bowl. Add the erythritol , baking powder, cinnamon and salt. Set aside.
- Peel banana and slice roughly. Mash with a fork in a bowl. Add to the milk mixture.
- Add the flour mixture to the liquid. Mix carefully and mind not overmix!
- Fry some oil a frying pan. Add one ladle of batter and fry for 2-3 minutes on both sides.
- Meanwhile rinse the kumquats and slice finely. Put into a pan with sugar and bring to boil on low heat. Simmer until sticky then serve warm with the pancakes.

I've actually never cooked with kumquats before.. what a delicious idea to turn them into a marmalade. I have to try out the recipe!
